How To Grill For A Party On A Budget Using A Weber


If you’re like me, you tend to feed a crowd when you invite people over.  That can be costly and very time-consuming.  Today, we work to make it more affordable and efficient.

This delicious recipe features an entrée, side, and dessert that keeps your party on budget while pleasing guests this summer.

Yield: Serve 4 People (double for 8ppl, triple for 12ppl)

Prep time: 10 Minutes

Cook time: 10-15 Minutes

Cook Temp: 450˚ F Grill Temperature

Ingredients

1 lb               Chicken, Breast, Boneless, Skinless                       cut into 2” cubes

1 lb               Steak, Top Sirloin                                                   cut into 2” cubes

1 ea              Pepper, Red Bell                                                     cut into 2” cubes

1 ea              Pepper, Green Bell                                                  cut into 2” cubes

1 ea              Onion, Red, Peeled                                                  cut into 2” cubes

1 ea              Zucchini, Sliced                                                        cut into 1” discs

1 ea              Yellow Squash, Sliced                                               cut into 1” discs

1 lb               Potatoes, Baby or Mini Red                                      cooked and cooled

1 lb               Chicken, Breast, Boneless, Skinless                          cut into 2” cubes

½ cup           Dressing, Golden Italian

¼ cup           Sweet Chili Sauce

2-4 tbsp        Rub-A-Dub, 5280 Culinary

Dessert Kabobs

1 ea              Pineapple, Fresh, Peeled                                          cut into 2” cubes

1 ea              Angel Food Cake or Pound Cake                             cut into wedges

1 ea              Whipped Cream, Canned or Fresh

Preparation Directions:

  • Clean and sanitize all cutting boards and prep surfaces prior to use
  • Read all manufacturer’s instructions before using grills and any cooking tools
  • Clean Weber grill before use – clean grill grates and wipe down with damp towel
  • Ignite grill and adjust temp to 450˚ F
  • While grill is heating up – prep skewers as follows
  • Cut chicken breast into 2” cubes
  • Place into a mixing bowl
  • Add Italian dressing, sweet chili sauce and 1 tbsp Rub-A-Dub
  • Mix well
  • Allow to sit for 5-10 minutes to “soak”
  • Cut top sirloin steak into 2” cubes
  • Cut vegetables as shown above and reserve for skewering time
  • Using the Weber Metal Skewers or grill mark metal skewers
  • Skewer the chicken pieces being careful not to pack them on tightly
  • Skewer the steak pieces being careful not to pack them on tightly
  • Season the steak skewers as desired
  • Prep the vegetables and potatoes as shown above
  • Skewer the vegetables as shown in video, spray with cooking spray and season
  • Place onto a cooking sheet and bring to grill
  • Open the grill and carefully add the chicken skewers and beef over the hottest part, watch for any signs of flare ups
  • Using a long pair of tongs, rotate the chicken after 3-4 minutes and ADD the vegetable skewers
  • Continue to cook with the lid closed and check temp.  desired temp is 165˚ F
  • While chicken, steak and vegetable skewers are cooking skewer and season the pineapple skewers
  • Remove the chicken, steak and vegetable skewers using heat gloves and bring into kitchen
  • Once the chicken, steak and vegetable kabobs are done ADD the pineapple skewers to the vegetable side
  • Once cooked to your desired doneness, remove from the grill and bring into kitchen
  • Carefully remove the chicken and steak from the skewers using heatproof gloves and place them onto a platter for serving
  • Carefully remove the pineapple from the skewers using heatproof gloves and place it onto a platter, on top of the angel food cake, and top with whipped cream
