How To Use A Weber Griddle Pan

It’s time to break out the Weber Cast Iron griddle and get things done.  Those things rhyme perfectly with… Pesto Salami Grilled Cheese Sandwich.

That’s right, we’re going all fancy for this one. Enjoy!

Yield: Serve 2 People (makes 2 sandwiches)

Prep time: 5 Minutes plus griddle seasoning time

Cook time: 3-5 Minutes

Cook Temp: 550˚ Grill Temperature

Ingredients

Measure  Ingredient                                                      Prep Notes      6 Ea                                                     Slices, Brioche Bread, Thick-Sliced                                           

3 tbsp                                                 Pesto, Basil Fresh                                                                               

18 slices                                             Salami, Genoa

6 tbsp                                                 Cheese Blend, Italian, Shredded

6 tsp                                                    Cheese, Parmesan, Shredded

As Needed                                         Butter, Salted for toasting bread                

Preparation Directions:

Clean and sanitize all cutting boards and prep surfaces prior to use

Read all manufacturer’s instructions before using grills, blenders, and any cooking tools

Clean Weber Grill Grates and ignite Weber, adjust temp to 500˚ and ignite

Heat cast iron griddle for 15 minutes

Once the Grill is at temp, time to season the griddle and prepare it for its first use

How to Season Your Griddle (Cast Iron)

Heat your griddle on high heat for 15 minutes or until the griddle starts to darken into a deep copper or dark brown color

Carefully add 1 tbsp of Blackstone griddle seasoning or high smoke point oil

Using a towel folded into a small square

Carefully work the griddle seasoning into the griddle until it is evenly applied

Leave the dome open and allow the griddle to burnish in the oil for 5-10 minutes.  Keep the heat on high

Repeat the above process 2 more times, every 15 minutes, until the oil has “dried” or polymerized with the griddle.  Wipe off and prepare for cooking

Lightly butter one side of all 6 slices of bread

Turn off the grill and allow the residual heat of the griddle to toast the bread

Add the bread to the griddle and top EACH slice quickly with

½ tbsp Pesto

1 tbsp Shredded Italian Cheese

1 tsp Parmesan

3 slices Salami

Cook on the first side for approx. 2 minutes to get some color

Using a long pair of tongs, carefully stack the grilled bread to form a triple-decker sandwich

Continue to cook for 2-3 minutes or until the sandwich is grilled to your desired doneness

Once grilled to your desired doneness, turn off the grill and remove the sandwiches using tongs

Serve with and devour

How to Clean Your Griddle – LIGHTLY SOILED

When finished cooking, allow the griddle to fully cool

Scrape off any food or debris using a burger spatula

Wipe off the griddle with a damp cloth or towel

Dry the griddle with a paper towel or towel

Wipe with another fine layer of griddle seasoning until evenly applied

Store in a cool dry place until use
